During this course we will be using a variety of different knives and knowing how to use them properly is very important for your safety and the safety of those around you. You will need to know how to identify the different types of knives that we will use and what cutting jobs they should be used for. You will also need to know how to carry, store, clean and use knives properly and safely. Below there is an instructional video that has important information covering all of the topics listed above. Knowing the various parts of a knife is important to be able to properly handle your equipment. Use the picture below to familiarize yourself with and review the various parts of a knife. While the example is a "Chefs" knife, the basic parts are the same for most knives.
